Whipped Texas Honey Butter

Soft, lightly salted, and made for biscuits, toast, cornbread, pancakes, or warm sweet potatoes.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 3 tablespoons Texas wildflower honey
  • 1 small pinch fine salt

Method

  1. Beat the softened butter for 1 to 2 minutes until light.
  2. Add the honey and salt, then beat again until smooth and fluffy.
  3. Serve right away or cover and refrigerate. Let it soften for a few minutes before spreading.

Makes About 3/4 cup

Sparkling Honey-Lemon Cooler

Bright, lightly sweet, and easy to adjust one spoonful at a time.

Ingredients

  • 2 tablespoons Texas wildflower honey
  • 2 tablespoons fresh lemon juice
  • 1/4 cup warm water
  • 1 1/2 cups cold sparkling water
  • Ice and lemon slices

Method

  1. Stir the honey into the warm water until completely dissolved.
  2. Add the lemon juice and divide the mixture between two ice-filled glasses.
  3. Top with sparkling water, stir gently, and taste before adding more honey.

Savory Honey-Mustard Glaze

A quick sweet-savory glaze for roasted carrots, Brussels sprouts, chicken, pork, or grilled vegetables.

Ingredients

  • 2 tablespoons Texas wildflower honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • Black pepper to taste

Method

  1. Whisk the honey, mustard, olive oil, vinegar, and pepper until smooth.
  2. Brush over roasted vegetables during the last 5 minutes of cooking, or use as a finishing glaze on fully cooked meat.
  3. Serve extra glaze on the side only if it has not touched raw meat.

Wildflower honey can change slightly from harvest to harvest. Begin with the amount listed, taste, and add more only when the recipe needs it. Do not give honey to children younger than 12 months.
